Mafen is actually an American style simple cake, which is a heavy oil cake that can be made soft by the foaming effect of baking powder. It's not like Qi Feng or Sponge that needs to beat eggs, just add the ingredients step by step and mix well. Easy to operate, yet delicious in taste. I used yogurt and raisins to make this cake more flavorful and rich in ingredients.

Steps to make Raisin Yogurt Mafen

  • 1. Prepare the ingredients according to the formula, sieve the low gluten flour, and set it aside.
  • 2. Beat the egg mixture, add white sugar, and stir evenly with an egg beater.
  • 3. Add corn oil and yogurt, stir well.
  • 4. Add salt and stir evenly.
  • 5. Sift in a mixture of low gluten flour and baking powder.
  • 6. Use a scraper to mix irregularly into batter.
  • 7. Add raisins and stir evenly. You can cover it with plastic wrap and leave it here for 30 minutes.
  • 8. Stir the batter after it has been left to stand, and then scoop it into a paper cup mold with a spoon about 8 minutes full.
  • 9. Put it into the preheated oven and bake at 175 degrees Celsius for 25 minutes.
  • 10. Take it out of the oven and let it cool. Simply pry open one with your hand, it's not bad, it's very soft.
