Steps to make Dad's Fish Slices - High Protein Healthy Fish Slices

  • 1. Remove the scales from the grass carp and kill them thoroughly, paying attention to the gills and the black membrane inside the belly of the fish.
  • 2. Wash the grass carp and remove the head, tail, and gills from the fish body.
  • 3. Start the knife from the head of the fish and slowly slice the fish meat along the spine towards the tail.
  • After slicing one side, flip it over and use the same method to slice another piece of fish meat.
  • 5. Start cutting from the back of the fish, at an angle of approximately 45 degrees, and gently slice off the large spines on the belly of the fish.
  • After removing the fish bones, start the knife from the tail of the fish and slice the fish meat into slices at an angle.
  • 7. Cut them one by one.
  • 8. Put the sliced fish slices into a basin, cut the scallions into sections, slice the ginger into thick slices, and then crush them all and add them to the fish meat.
  • 9. Squeeze in three to five drops of lemon juice and add a teaspoon of salt to marinate the base flavor.
  • 10. Add 2 tablespoons of cooking wine, mix well and marinate for half an hour.
  • After marinating, add 1 tablespoon of corn starch and half a egg white, and gently stir up and down with chopsticks until evenly mixed. (Because the fish fillet is very thin, it cannot be stirred in circles to avoid breakage. It should be gently picked up and down and mixed well.)
  • 12. Make soybean milk within half an hour of marinating fish slices. Wash the soybeans and remove any bad ones, soak them early until they are full. (I soaked it when I slept the first night. This is my personal habit in the rainy season. The soybean milk machine can also make dry beans.)
  • 13. Pour the soaked soybeans into the soybean milk machine and add proper amount of water.
  • 14. Connect the power supply and turn on the soybean milk function.
  • 15. Use a colander to filter the prepared soybean milk in a small milk pan for standby.
  • 16. Pour an appropriate amount of water into a wok, add a suitable amount of chopped ginger slices and scallions, bring the water to a boil, and make scallion ginger water.
  • 17. Add the marinated fish slices and cook until boiling. (Slightly more water in the pot makes the fish slices easier to cook and have a better taste)
  • 18. While boiling the fish fillet, add 1 teaspoon of salt to soybean milk, mix well, and boil.
  • 19. Take out the cooked fish fillet, put it into the boiled soybean milk, put it on a plate, and sprinkle with a little red sweet pepper and chopped green onion.
