Steps to make Mapo tofu
- 1. Cut tofu into small pieces measuring one centimeter square, mix minced meat with starch cooking wine, cut scallions into sections, and chop garlic into minced garlic.
- 2. Put tofu in water, add a little salt and cook for two minutes, then remove and set aside. This step cannot be omitted, otherwise tofu will have a bean like smell.
- 3. Heat oil in the pot, add minced meat and flip over.
- 4. Stir fry minced meat until 80% cooked, then add Pixian Douban sauce and stir fry minced garlic.
- 5. Then add tofu and stir fry gently.
- 6. Then add boiling water and cook for 2 or 3 minutes to let the tofu taste.
- 7. Add water starch and thicken the sauce.
- 8. Add scallions before serving.
