- 1. The ingredients for making tempura are not complicated, and you can use them to make any fish, shrimp, or vegetables you want. However, there is a certain level of craftsmanship in cutting vegetables and fish into strips or slices, and the difficulty lies in the handling of shrimp. The first time I handled the shrimp was incorrect, as shown in the picture, I did not remove the shrimp head. The second time, I perfectly processed the shrimp according to the correct cutting technique of Tempura, as shown in the following picture.

Shrimp treatment: The first step is to remove the shrimp head, peel off the shrimp shell, and leave only a little bit of the tail; The second step is to use a small knife to cut the shrimp body four times until it reaches three-quarters of the way, without cutting it off. The purpose is to cut the shrimp tendons. When frying, the shrimp will be straight and not bent, which is a sign of whether the seafood tempura is authentic; Step three, marinate the shrimp with cooking wine, white pepper, and a little salt for 15 minutes.
