Steps to make Orange Qi Feng Cake

  • 1. Material preparation.
  • 2. Separate the protein.
  • 3. Put orange juice, fine sugar, and salad oil into a bowl and stir with a manual egg beater until the sugar melts.
  • 4. Pour in the orange peel and stir well.
  • 5. Mix low gluten flour, corn starch, and baking powder evenly and sieve them into the orange juice. Mix well.
  • 6. Add egg yolks in batches and stir evenly.
  • 7. Mixed egg yolk batter. (Do not over mix)
  • 8. Add a few drops of white vinegar to the egg whites, stir with an electric whisk until the fish eye bubbles form, add fine sugar in three parts, and stir.
  • 9. Bring to a state close to dry foaming.
  • 10. Add two-thirds of the protein to the egg yolk batter and stir well.
  • 11. Pour the mixed batter into the remaining one-third of the protein foam, and quickly stir it evenly. Avoid stirring.
  • 12. Pour the batter into the grinding tool. Shake a few times and place in the oven at 165 degrees Celsius for 30-35 minutes.
