Steps to make Rice dumpling with Black Sesame -- Low sugar and less oil version

  • 1. First, make the filling. Add 100g of cooked black sesame seeds to 40g of soft white sugar and grind into powder in a blender.
  • 2. Add 16 grams of oak honey (right in the picture) and 20 grams of lard (left in the picture).
  • 3. Stir evenly, and the black sesame filling is ready.
  • 4. Put the sesame filling into a preservation bag and shape it into a rectangular shape. Freeze in the freezer for half an hour.
  • 5. 180 grams of glutinous rice flour and 140 grams of warm water to form a dough.
  • 6. Take a small amount of dough and cook it in a pot.
  • 7. Put the cooked dough back into the original dough and knead it evenly.
  • The kneaded dough is very soft, cover it with plastic wrap to prevent the skin from drying out.
  • At this point, take out the frozen black sesame filling, cut it into small portions, and knead it into balls.
  • 10. Roll the dough round and cut it into small pieces of suitable size.
  • 11. Pinch the dough into a circle by hand and place a sesame filling ball inside.
  • 12. Close the mouth of rice dumpling with a tiger's mouth.
  • 13. If you feel the skin of rice dumpling is dry, you can pat a little water on your hand and put rice dumpling between your palms to rub until the surface is smooth.
