  • 1. Six sea catfish.
  • 2. Remove the internal organs, cut off the fish gills, and wash the mucus with hot water.
  • 3. Prepare ingredients.
  • 4. Heat up the hot oil in a wok and fry the fish. This step is crucial as the oil will instantly solidify the fish without breaking. After frying for three to five minutes, add scallions, ginger, garlic, and chili peppers and fry until fragrant.
  • 5. Add hot water, no fish, and seasoning.
  • 6. Add frozen tofu.
  • 7. Add shrimp and stew for 20 to 30 minutes.
  • 8. When cooking, be sure not to pour the dish over, otherwise the fish will break after two rounds of tossing. Sprinkle a handful of cilantro when serving to enhance the flavor.
