There are many legends about grits. According to legend, when Emperor Qianlong went to the south of the Yangtze River, he passed Linyi for breakfast and wanted to taste the local famous food. Local officials offered this special breakfast. After tasting it, Qianlong had never drunk such delicious Congee before. He casually asked, "What is this?" The officials also asked, without hearing it clearly, "What?" Qianlong heard it as "grits". So it spread from one to ten, from ten to a hundred, and so it spread. Yan "is a soup made from meat. It is said to be a breakfast food of the ancient Hui ethnic group in the Western Regions. At first, a Muslim couple from the Yuan Dynasty came to Linyi to run a business called "Meat Paste". Later, there were more and more imitators, and during the Ming Dynasty, it was designated as "Grain Paste"< br>

Steps to make Yimeng Famous Food - Grit (SA)

  • 1. Kill one old mother chicken now, add enough water to the pot, heat it up to about 50 degrees, and soak the chicken for a while.
  • Soak the wheat kernels in clean water.
  • 3. Pour out warm water and refill the pot with water.
  • 4. Add whole scallions and ginger, and cut the ginger into large pieces.
  • 5. Put the anise, Sichuan pepper, and fragrant leaves in the cooking box.
  • 6. Put the ingredient box into the pot and start stewing the chicken.
  • After about 1 hour, the chicken is fully cooked and can be easily inserted with chopsticks.
  • 8. Tear off the chicken, take it out and put it on a plate, and keep the chicken rack in the pot.
  • 9. Put in the wheat kernels.
  • 10. Stew for about an hour, then remove the chicken rack and seasonings.
  • 11. Mix flour with water to form a thin sauce.
  • 12. Pour the sauce into the pot and stir.
  • 13. Wash and chop the coriander.
  • 14. When the porridge soup in the pot is boiled again, add soya sauce, vinegar, salt and pepper and continue to stew for 5 minutes.
  • 15. Tear the chicken out into shreds and put it in a bowl.
  • 16. Put in the porridge soup.
  • Sprinkle cilantro and it's ready to eat.
