Jineijin Jiaomo is the most authentic traditional snack in our Zhumadian. The roasted Jiaomo noodles are fragrant, crispy and healthy, and have a therapeutic effect on strengthening the spleen and promoting digestion. They are generally used to regulate children's accumulated food. Nowadays, at the dining tables of high-end restaurants in Zhumadian, chicken inner golden burnt bun has become an indispensable dish. Men can eat one or two pieces of chicken inner golden burnt bun before drinking. It not only reduces the stimulation of alcohol on the stomach, but also strengthens the spleen, nourishes the stomach, and regulates the liver. Steps to make Jineijin Jiaomo (Traditional Cuisine of Zhumadian)

  • 1. Put the cleaned sesame seeds into a frying pan and stir fry continuously over low and medium heat until a sesame seed can be easily crushed with your fingers. Turn off the heat.
  • 2. Quickly pour it onto the pan (or cutting board), peel it off and let it cool.
  • 3. Pour the cleaned and dried chicken inner gold into the pot, and use the remaining temperature of the pot to bake.
  • 4. Crush with a blender (or roll with a rolling pin) and sieve. Pour flour, chicken inner gold, salt, and sesame into a bowl.
  • 5. Mix well, pour water while stirring with chopsticks to form dough.
  • 6. Use your hands to make a dough, cover it with a lid (or cling film), and wake up for about 20 minutes.
  • 7. Knead the dough smooth.
  • 8. Divide the ingredients and rub them into round strips.
  • 9. Grind into small pills weighing around 35-40 grams, knead them into circles, and cover the anti drying skin with a damp cloth (or cling film).
  • 10. Take a pill and flatten it.
  • 11. Use a small rolling pin to roll out the dough into round and thin slices of the same thickness and size (the thinner the better, the thinner the kang will be, and the thickness will be similar to or even thinner than sesame seeds).
  • 12. Preheat the electric cake jar and place it in a round thin slice.
  • 13. Flip over and bake until both sides turn brown, then take out and cool down. You can eat the crispy and fragrant burnt bread.
