Steps to make Jin Gua Nuo Mi Zi - Q Pop Bright Little Dessert
- 1. Materials: 180g glutinous rice flour, 35g clarified flour, 10g coconut paste, 80g cooked bean paste, 2g matcha powder, and some sugar and (water) (I don't use sugar if the bean paste is sweet).
- 2. Peel the pumpkin and cut it into pieces.
- 3. Put it into a steamer and steam until cooked.
- 4. Steam or grind pumpkin into paste and pour it into a bowl.
- 5. Mix 150g of glutinous rice flour and 30g of clarified flour evenly into the hot pumpkin puree, mix together and cool slightly.
- 6.30g glutinous rice flour, 5g clarified flour and 2g matcha powder shall be mixed evenly.
- 7. Add hot water and stir until snowflakes form. Let it cool slightly.
- 8. Combine the two kinds of noodles into smooth pumpkin glutinous rice dough and matcha dough.
- 9. Pumpkin dough is made into uniformly sized small potions, bean paste is made into balls smaller than pumpkin balls, and matcha dough is made into potions larger than peanuts.
- 10. Wrap pumpkin balls into round cakes and fill them with bean paste.
- 11. Roll the mouth into a smooth spherical shape and place it on the board.
- 12. Use a comb (I only use it in the kitchen and don't have toothpicks available) to press out the pattern of the pumpkin.
- 13. Use matcha dough to make a melon stem.
- 14. The golden melon and glutinous rice germ are ready.
- 15. Apply a thin layer of oil to the corn husk (or directly on the steamer), then cover it with glutinous rice germ.
- 16. Steam for 5-8 minutes and cease fire. Cover for 2 minutes before serving.
