Steps to make Beijing Roujiamo

  • 1. Knead the dough in advance, and determine the amount of flour according to your own consumption. Just use yeast to make dough. For example, for 500 grams of flour, 5-8 grams of yeast are used. In summer, 5 grams are used, and in winter, it's cold. You can add a little more, but not too much, otherwise there will be a strong yeast flavor and it won't taste good. Cold or warm water can be mixed with noodles, and you can adjust the softness or hardness by yourself. Cover the dough with a damp cloth, cover it with a lid, and let it ferment in a warm place. When the dough is 2-2.5 times its original size, lift it up. The surface underneath is fine and has even pores, indicating successful fermentation
  • 2. Take out the prepared dough, place it on a cutting board, sprinkle some flour, knead it slightly, and then knead it into thick strips
  • 3. Divide into 9 equal parts, with the quantity as much as you like. If you like a larger cake, divide it into fewer portions, and if you like a smaller cake, divide it into more portions
  • 4. Flatten the dough and use a rolling pin to slightly roll it out
  • 5. Pour a small amount of oil into the frying pan, shake it evenly at the bottom of the pan, and then put the dough into the pot. Before entering the pot, it is best to wipe off the dry flour on the surface to prevent it from sticking to the pan
  • 6. Flip over the pancake, cover it with a lid, turn it on low heat, and wait for the cake to bulge and turn golden on both sides before serving
