Steps to make Rose Nut Double Crispy Mooncake
- 1. Crush the peanuts.
- 2. Bake walnuts in the oven at 150 degrees Celsius for about seven to eight minutes until fragrant.
- 3. Crush the roasted walnuts.
- 4. Mix walnuts, peanuts, and other filling materials evenly.
- 5. Mix the pastry ingredients into a ball.
- 6. Knead the oilskin material into a smooth dough.
- 7. Roll out the oilskin material and add the pastry.
- 8. Wrap the pastry in oil and wrap it in a circular shape.
- 9. Roll out the pastry dough into a rectangle.
- 10. Gently roll up the dough.
- 11. Cut the dough roll into sections according to the required size. (I divided it into sections of about 30 grams)
- 12. Roll the cut dough into thin rolls and let it relax for 15 minutes. (If the 11 step dough is rolled thin enough, this step can be omitted)
- 13. Ball the filling into a spherical shape every 30 grams.
- 14. Fold both ends of the dough roll towards the center to form a spherical shape.
- 15. Press the dough into a bowl shape and add the filling.
- 16. Wrap the dough around the filling and close it into a circular shape.
- 17. Close the dough with the filling downwards, use a mooncake mold to create patterns, and bake in a preheated oven at 180 degrees for 5 minutes to set.
- 18. Take out the shaped mooncakes, brush a thin layer of egg yolk liquid on the surface, and put them in the oven to continue baking for about 15 minutes. The specific time depends on your own oven.
