Technique
Steps to make Stir fried cured glutinous rice
- 1. Wash the dried shiitake mushrooms and soak them until soft. Wash the glutinous rice and soak it in clean water for about 2 hours. Remove the stems and cut the soaked shiitake mushrooms into thin strips (do not pour out the water used to soak the shiitake mushrooms)
- 2. Slice or dice sausages, prepare peanuts, and soak shrimp in clean water until soft
- 3. After steaming in the steamer, put in the soaked glutinous rice and steam for about 20 minutes before removing it (be careful not to scald, use anti scalding tools)
- 4. Spoon an appropriate amount of peanut oil into the wok, stir fry the peanuts continuously over low heat until they turn brownish red (be sure to stir fry continuously over low heat to prevent the peanuts from burning), then remove and set aside
- 5. Leave a little oil in the wok, pour in shredded shiitake mushrooms and stir fry until fragrant. Remove from the wok
- 6. Pour the sausages into a wok and stir fry until they appear transparent and shiny
- 7. Pour in the shredded shiitake mushrooms again, add the soaked shrimp, and stir fry well
- 8. Pour the steamed glutinous rice into the ingredients, stir fry quickly, and add soy sauce, salt, and pepper
- 9. If glutinous rice is clumpy, you can add an appropriate amount of water soaked in shrimp and shiitake mushrooms (do not add too much water at once to avoid adding too much water. Glutinous rice is too soft and rotten)
- 10. Add chopped scallions, add an appropriate amount of sesame oil, stir fry quickly again until evenly distributed, and serve
