Steps to make Hot pressed Qi Feng cake
- 1. Heat milk, cooking oil, and 5 grams of granulated sugar together in a milk pot and stir continuously until the liquid in the pot boils. Turn off the heat. To allow the liquid to cool properly, lift the milk pot and shake the liquid about 80 times.
- 2. After sieving the low gluten flour, add it to the milk pot as soon as possible
- 3. Continuously stir until the solid liquid is completely mixed into a hot dough
- 4. Separate the egg yolk and protein into containers. When the dough is no longer hot, pour the egg yolk into the dough and stir evenly

- 6. The next steps are the same as usual for Qi Feng. Use an electric egg beater to beat the egg whites. The container for protein should be absolutely free of water in order to be easily whipped. Add 20 grams of granulated sugar to the protein in 2 portions and beat the protein until it has upright pointed edges. The whole process takes about 2 minutes.
