Steps to make Shrimp Tofu Balls
- 1. Prepare raw materials.
- 2. Remove the shrimp line from the shrimp and marinate it with cooking wine and scallions and ginger for about 20 minutes to remove any fishy smell.
- 3. Cut tofu into cubes and use a small spoon to empty the middle (as shown in the picture)
- 4. Remove the shrimp, along with the pork belly and some remaining tofu, add an appropriate amount of salt and pepper, scallions and ginger, and a spoonful of cornstarch to a blender.
- 5. Stir for a while longer to make it sticky and delicate.
- 6. Put the filling into the tofu, as shown in the picture.
- 7. Add some oil to the pot and fry the tofu at 60% oil temperature. Do not fry it too hard, as it should have a slight yellow color around the edges, otherwise the tofu will taste too hard.
- 8. Place the fried tofu on a plate and steam it in a steamer for 5 minutes.
- 9. Bowl sauce: Mix an appropriate amount of oyster sauce, salt, steamed fish and soy sauce, corn starch, and water for later use.
- 10. Add a small amount of bottom oil to the pot, pour the juice from the bowl into the pot, stir constantly, and make a glass thin sauce. Don't make it too thick, this sauce. Once made, turn off the heat and add a few drops of sesame oil.
