Steps to make Super Delicious Roujiamo

  • Mix 1.320g of warm water with 8g of yeast evenly
  • 2. Weigh out 600g of flour
  • 3. Add yeast water to flour and stir with chopsticks until fluffy
  • 4. Then knead with water until the dough is evenly smooth
  • Because today it's only 13 degrees here, we warmed up some water and put the dough in a lid to ferment for about an hour. If the weather is hot, we can ferment it directly at room temperature
  • 6. The fermentation time can be used to prepare pork belly, which can be cut into cubes of the size shown in the picture
  • 7. Put the pork belly in cold water, sprinkle with a handful of Sichuan peppercorns, and add a spoonful of cooking wine
  • Boil in boiling water for about five minutes, while constantly flipping the pork belly until it turns white. Remove and rinse with cold water for later use
  • 9. Put the pork belly into the pot and add scallions and ginger
  • 10. Juice mixing: Mix 2 tablespoons of light soy sauce, 4 tablespoons of dark soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, and 3 rock sugar evenly. The spoon size is shown in the picture
  • 11. Pour the bowl juice onto the pork belly
  • 12. Add water to cover the pork belly, sprinkle star anise, cinnamon, fragrant leaves, and grass fruit, and bring to a boil over high heat
  • 13. Then transfer to an electric rice cooker and stew for an hour and a half. This step can also be omitted and stewed directly over low heat in the pot
  • 14. Because my rice cooker is small and there is still some soup left, I added some eggs and vegetarian chicken
  • 15. After one hour, the dough will ferment to twice its original size. Stick your fingers to the flour and poke a hole without rebounding, and the flour will not shrink back. The picture shows what it looks like after I remove the plastic wrap (it's better not to cover it with plastic wrap)
  • 16. Take out the dough and knead it until it is even and smooth

  • 18. Cut into 15 evenly sized small pieces
  • 19. Take out a small piece and knead it evenly. Use a rolling pin to roll it open and fold it
  • 20. Roll it up by hand
  • 21. Repeat the above steps, cover with plastic wrap and let it rest for 10 minutes
  • 22. After waking up, take out the dough and flatten it
  • 23. Roll it out slightly
  • 24. Place the lid on the electric pancake pan and bake for about five minutes until both sides turn golden brown
