Steps to make Super Delicious Roujiamo
- Mix 1.320g of warm water with 8g of yeast evenly
- 2. Weigh out 600g of flour
- 3. Add yeast water to flour and stir with chopsticks until fluffy
- 4. Then knead with water until the dough is evenly smooth
- Because today it's only 13 degrees here, we warmed up some water and put the dough in a lid to ferment for about an hour. If the weather is hot, we can ferment it directly at room temperature
- 6. The fermentation time can be used to prepare pork belly, which can be cut into cubes of the size shown in the picture
- 7. Put the pork belly in cold water, sprinkle with a handful of Sichuan peppercorns, and add a spoonful of cooking wine
- Boil in boiling water for about five minutes, while constantly flipping the pork belly until it turns white. Remove and rinse with cold water for later use
- 9. Put the pork belly into the pot and add scallions and ginger
- 10. Juice mixing: Mix 2 tablespoons of light soy sauce, 4 tablespoons of dark soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of oyster sauce, and 3 rock sugar evenly. The spoon size is shown in the picture
