Steps to make Authentic Old Chengdu Dandan noodles

  • 1. Prepare the minced pork to be stir fried.
  • 2. Moderate amount of round thin noodles. (Practical 60g)
  • 3. Prepare Yibin sprouts and cooked peanuts.
  • 4. Prepare various seasonings. Please note that the amount of white sugar in the seasoning can only be a small amount to neutralize the taste, and the texture of the noodles should not have a sweet taste.
  • 5. After removing the red coat from the cooked peanuts, mash them into small pieces. (or crushed with a rolling pin)
  • 6. Put all seasonings, except for crushed peanuts, into the noodle bowl one by one.
  • 7. Start stir frying until crispy and crispy. Heat corn oil in a wok until 50% hot, then add minced pork and stir fry until the seeds are scattered.
  • 8. Slowly stir fry over low heat until the meat is minced and discolored, then add cooking wine to remove the fishy smell.
  • 9. Add chopped ginger and stir fry well. (When stir frying noodles, be patient and not impatient.)
  • 10. Continue to stir fry slowly, using a spatula to crush the minced meat while frying.
  • 11. As the water gradually dries during stir frying, add a little sweet bean sauce and stir fry evenly until the minced meat is coated with the sauce.
  • 12. Continue to stir fry slowly until the minced meat turns golden brown and emits a fragrant oil.
  • 13. Add soy sauce for seasoning and coloring.
  • 14. Add an appropriate amount of chicken essence to enhance the flavor.
  • 15. Stir fry well and turn off the heat.
  • This is the stir fried crispy sauce, it's very fragrant.
  • 17. Start cooking noodles. After boiling water in the pot, add noodles and use chopsticks to spread them apart. (The water for cooking noodles should be wide, haha)
  • During the process of cooking noodles, it is necessary to add water multiple times. Once the noodles are cooked to the center, turn off the heat.
