  • 1. We bought pig ears for hair removal in our supermarket. Clean repeatedly. Put a whole seasoned wine, star anise, and fragrant leaves into a cold water pot. Boil.

  • 3. Let's make the base oil now. Fried vegetable oil with Sichuan pepper, star anise, fragrant leaves, scallions, ginger, and garlic until fragrant. Cooling standby.
  • 4. Blanch the bean sprouts and set them on a plate.
  • 5. Wipe the cucumber into thin threads and gently dry it with a little salt, otherwise the cucumber will water out later, affecting the taste of the entire dish.
  • 6. Completely cooled pig ears, we slice them into very thin pieces in one direction.
  • 7. Place bean sprouts and cucumbers at the bottom, and cover the pig ears one by one.
  • 8. This is a pre made red oil chili. We'll keep it as a backup.
  • 9. Then add all the seasonings except for the oily and spicy ones from the previously fried base oil. Add chopped scallions, ginger, and garlic, stir well, and drizzle with a little more oil and chili peppers on top of the final layer. Let the oil and chili peppers completely soak in this ingredient. You can eat it in ten minutes.
