Steps to make Original Milk flavored Durian Cheese Cake

  • 1. Thaw the durian flesh and add 60g of light cream
  • 2. Use a blender to make a pulp
  • 3. Protein and egg yolk separation
  • 4. Take out the cream cheese in advance and soften it in a basin
  • 5. Add 40 grams of sugar
  • 6. Beat with an electric egg beater
  • 7. Add egg yolks
  • 8. Beat smooth and without particles
  • 9. Add durian batter
  • 10. Stir evenly
  • 11. Add 140 grams of light cream
  • 12. Stir evenly
  • 13. Sieve in flour
  • 14. Stir evenly
  • 15.60 grams of fine sugar ready
  • 16. When the protein bubbles at low speed, add one-third of the sugar
  • 17. When the protein is slightly textured at high speed, add one-third of the sugar
  • When the protein is beaten at high speed until it is delicate and has obvious patterns, add the remaining sugar
  • 19. Beat until it is wet and foamy, that is, lift the head of the egg beater, and the protein will have a curved long hook
  • 20. Place a baking tray in the middle and lower layers of the oven, with hot water inside. Place another baking net on top of the tray and start preheating. Heat up and down at 160 degrees Celsius
  • 21. Add half of the protein paste into the egg yolk paste

  • 26. Place the preheated oven in the middle and lower layers, at 160 degrees Celsius, over high and low heat for about 70 minutes, with a golden surface
  • 27. When the time is up, don't rush to take it out of the oven. Continue to simmer in the oven for about 15 minutes, then remove it;
  • 28. Do not demold. After cooling, refrigerate in the refrigerator for more than 4 hours
  • 29. Demoulding, tearing off oil paper, cutting into pieces for consumption
