[Ningxia] Fried Oil Fragrance

What impressed me most in the past few years in Yinchuan is the Hui cuisine, beef and mutton, various baked buns and Guokui baked with vanilla, fried Sanzi, various Fried Dough Twists snacks, and the smell of oil. There are large salty ones, and small ones are the smell of pumpkin oil. Usually, there will be one selling the smell of oil in the streets and lanes. Youxiang is also called Youbing (Deep-fried round and flat dough-cake). Every year, stalls selling Youxiang and Sanzi are crowded at the entrance of the major Mosques on the Eid al Fitr and the Eid al Adha. The scene is really spectacular. The stalls are piled high with Youxiang and Sanzi. The oil aroma I made has a similar taste to what I bought, the only difference being that I didn't add alkali. The oil aroma with alkali feels more crispy on the outside and has a more authentic texture. Eating at home is still very good.

Steps to make [Ningxia] Fried Oil Fragrance
- 1. Steamed pumpkin into pumpkin puree
- 2. Add eggs and yeast (eggs are optional, but can be added later)
- 3. Stir evenly
- 4. Add flour and stir until fluffy
- 5. Knead into dough
- 6. Fermentation is twice as large
- 7. Take out an appropriate amount of exhaust and slowly knead honey and sesame oil into the dough (if eggs were not added in the second step, they can be added and kneaded evenly). If there is alkali, add some more alkali
- 8. Relax for about fifteen minutes
- 9. Divide into small parts
- 10. Take a piece and roll it into a small round piece, about half a centimeter thick, and make a cut in the middle
- 11. Heat the wok and cool the oil, then fry the pancake on low heat and slowly. Frying sesame oil is more fragrant
