Steps to make Xinjiang Latiaozi

  • 1. Prepare noodle materials
  • 2. Add water and eggs to the flour and knead them in one direction to form a ball. Cover with plastic wrap and let it stand for 15 minutes
  • 3. Knead for the second time until almost smooth, cover with cling film and let it stand for 15 minutes
  • 4. Rub until the dough is smooth for the third time and let it stand for 15 minutes
  • 5. Apply oil to the cutting board and the surface of the dough as well
  • 6. Cut the dough into 5 pieces
  • 7. Pull each dish long, cover it with cling film, and let it stand for 10 minutes
  • 8. Take out the static dough and knead it into round noodles the size of your index finger while elongating it
  • 9. Dish the noodles and place them on a greased plate. Cover with plastic wrap and refrigerate in the refrigerator. Take them as you please
  • 10. After putting the strips in the refrigerator for refrigeration, you can prepare various dishes
  • 11. Pour an appropriate amount of oil into the pot, add ginger and Sichuan pepper powder until fragrant, and stir fry the onions until transparent
  • 12. Add green peppers and stir fry tomatoes until soft
  • 13. Add lamb slices and stir fry to change color, then add star anise cinnamon powder
  • 14. Add an appropriate amount of hot water and boil to open the salt, light soy sauce, sprinkle with black pepper, and mix well
  • 15. When eating, hold the noodles in your hand like a roll of yarn, and swing them up and down on the chopping board a few times to make them thinner again
  • 16. Cook the pork strips in a pot
  • 17. After cooking, put the noodles in cold water for later use
  • 18. Take out the chilled water and put it on a plate. Mix the stir fried ingredients on the noodles and enjoy!
