Zha Mian Pian is an ordinary noodle dish in our northwest region. It is simple to make and has a unique flavor. In fact, the most authentic Zha Mian Pian is accompanied by tomato stir fried eggs, diced potatoes and radishes, and a hundred year old soup cooked with preserved meat. After sprinkling cilantro, it is dry mixed and pulled into a noodle dish. This authentic taste is truly our century old shop "Fan Ji" in Xi'an. But when I was young, in an age when I could not even smell the meat flavor, my father gave our children the pride of our courtyard that they could make such plain Noodles in soup slices. Of course, in today's era of such a high-end living standard, you can freely match your favorite vegetables according to your personal preferences, which will be more nutritious, and also a superior choice for the elderly and children.
