Kimchi pot

The weather has been too cold recently. Although my daughter's workplace has a microwave, there is never a bowl of hot soup that feels comfortable to drink. I've been bringing soup to my daughter these past few days, such as tomato and beef brisket soup, black chicken and bamboo shoot soup, etc. My daughter just drank the soup and didn't eat any food. I really can't think of any more soup that can keep me full. I rummaged through the inventory in the fridge, including kimchi and Korean chili sauce that my daughter bought, and bacon and ham slices that I bought. Let's make a kimchi pot< br>

Steps to make Kimchi pot
- 1. Cut broccoli into small pieces, soak in salt water for 5 minutes, wash and remove, drain.
- 2. Tear the shiitake mushrooms into small pieces, soak them in salt water for 5 minutes, wash and remove, then drain.
- 3. Take out the tofu and cut it into thick slices. I cut about 1cm thick.
- 4. Cut the bacon into sections about 6CM long, and slice the ham into four pieces.
- 5. Cut potatoes into slices about 0.5cm thick and soak them in clean water to prevent oxidation and blackening.
- The kimchi I use is originally cut into pieces. If not, cut it into pieces and add a lot of kimchi juice
- 7. Cut 3 slices of ginger, peel and slice garlic.
- 8. Prepare 1 tablespoon of oyster sauce, 1 teaspoon of sugar, and originally about 2 grams of salt, but didn't add them later. Korean chili sauce also uses 1 tablespoon.
- 9. Also need a bowl of rice washing water, preferably the water used for the second time. If not, use clean water.
- 10. In a non stick pan, add less oil and fry the bacon until it becomes fatty. However, do not fry it too hard as it may not taste good. Curling like in the picture is sufficient.
- 11. The potato slices are also fried until the edges on both sides are golden brown. It's okay not to fry them, as fried potato slices are prone to boiling.
- 12. Add ginger and garlic slices and stir fry until fragrant.
- 13. Add kimchi and stir fry until fragrant.
- 14. Pour rice water into a clay pot, add bacon and ham slices, and turn on low heat for 5 minutes before turning to high heat.
- 15. Put the ingredients that are not easily soft and durable first, and then put the potato slices into the pot.
- 16. Put kimchi and ginger garlic in the pot.
- 17. Cook until the potatoes are soft and tender (to your liking), then add broccoli and shiitake mushrooms.
- 18. Add oyster sauce.
- 19. Add chili sauce, stir well and taste the flavor. I think the saltiness is about enough, so I didn't add the salt I prepared and added 1 teaspoon of sugar.
- 20. The softness of broccoli is about the same, add tofu and bring to a boil.
- 21. Don't look at a pot full, it can only fill a 700ML stew beaker, which is only enough for one person to eat.
