  • 1. Prepare scallop meat.
  • 2. Thaw thoroughly, then add an appropriate amount of cooking wine, salt, scallions, ginger, and pepper to marinate for 20 minutes to enhance flavor and remove fishy smell.
  • 3. Remove the scallions and ginger, pour out the excess water, and add an appropriate amount of starch.

  • 6. Fry both sides golden.
