Steps to make Green melon mousse cake

  • 1. Remove the filling from the cookies, put them in a fresh-keeping bag, and use a rolling pin to crush them into crumbs.
  • 2. Add melted butter and mix well.
  • 3. Take a 6-inch heart-shaped cake mold, crush the mixed cookies into the mold and compact it. Put it in the freezer for 15 to 20 minutes.
  • 4. Prepare to wash the cucumber, cut it into pieces, and put it in the blender to mash it into cucumber puree. (Do not add water)
  • 5. Filter out the cucumber puree and juice separately.
  • 6. Take 8 grams of fish gelatin powder, 20 grams of white sugar, 35 grams of cucumber juice, and melt them in water to form fish gelatin solution.
  • 7. Pour the fish gelatin solution into the cucumber puree and mix well.
  • 8. Take out the frozen cookie mold, pour the cucumber puree into the mold and scrape it flat. Put it in the freezer for half an hour.
  • Prepare 200 grams of milk. (Note: The original recipe was 200 grams of yogurt. I am afraid that yogurt and cucumber may not taste good, so I changed it to pure milk.)
  • 10. Take 12 grams of fish gelatin powder, 20 grams of white sugar, 35 grams of cold water, and melt them into a fish gelatin solution over water.
  • 11. Pour the fish gelatin solution into 200 grams of milk and mix well.
  • 12. Pour into the mold that has been frozen for half an hour. Put it back in the freezer for half an hour.
  • 13. Take 5 grams of fish gelatin powder, 10 grams of white sugar, and 35 grams of cucumber juice and melt them over water. Then pour in all the remaining cucumber juice and mix well to make cucumber liquid.
  • 14. Finally, pour the cucumber juice into the frozen mold and place it back in the freezer for one hour until it solidifies. (If refrigerated, it should take at least 4 hours or more)
