Steps to make Golden peach jujube paste mooncake
- 1. First, convert the syrup and add it to the rice water. Mix well.
- 2. Then add peanut oil and stir evenly with a manual mixer until emulsified.
- 3. Pour the sifted flour onto the dough pad, leaving a small amount of flour to adjust the hardness.
- 4. Then pile up the flour into a small hill, hollow out the middle, and pour in the second part of the prepared liquid.
- 5. Use a scraper to sprinkle the flour little by little, slowly blend until it forms a dough, then wrap it in plastic wrap and refrigerate for 2 hours.
- 6. Divide the sorted dough into small pieces, each weighing 25g, and divide the jujube paste filling into 50g each. The ratio of mooncake skin to filling can be 2:8 or 3:7, depending on personal preference
- 7. Take out a piece of dough, knead it into a round ball shape, and flatten it with a scraper.
- 8. Put on PVC gloves, then pick it up and place it on the tiger's mouth of one hand. Place the prepared filling in the center of the dough, wrap it with a leather bag, and push it up bit by bit. Make sure your hands are light and not exposed, and try to make the dough evenly distributed.
- After wrapping, it becomes a round ball, roll a thin layer of corn starch on it for easy demolding, then fasten the mooncake mold onto the ball, press out the mooncake pattern twice with speed and force, immediately lift the mold, and it is completed.
- 10. Gently spray a little water on the surface of mooncakes, then put them in a preheated oven with high heat of 210 degrees and low heat of 190 degrees for 8 minutes to set.
- After the first baking, the mooncake pattern takes shape and is left at room temperature without being too hot to touch. Then, use a wool brush dipped in a small amount of egg yolk solution to quickly apply a thin layer to the surface.
- 12. Re enter the preheated oven at 180 degrees and bake for 12-15 minutes, which needs to be adjusted according to your own oven.
- 13. After the second baking is completed, take it out immediately and air dry it online to cool down.
- 14. Mix a small amount of rum with edible gold powder, and use a small brush to apply a layer of pattern on the surface of the mooncake.
