Steps to make Sichuan Spicy Chicken

  • 1. Take half a fresh tender chicken, cut it into thumb sized pieces, add salt, cooking wine, pepper, ginger, and soy sauce.
  • 2. Add an egg yolk to the sliced chicken and stir well, marinate for three hours.
  • 3. Finally, add a little starch and mix well.
  • 4. Prepare a small amount of white sesame seeds.
  • 5. Prepare some dried chili peppers.
  • 6. There is also a little Sichuan pepper.
  • 7. After heating the pot, add oil and fry the chicken pieces one by one until golden brown. Remove from the pot and wait for the oil temperature to rise before pouring the chicken pieces into the pot for a second round of deep frying. After muscle dehydration, it becomes drier and more chewy.
  • 8. Put a little oil in the pot, then add garlic, ginger shreds, and Sichuan Pixian Douban Sauce.
  • 9. Pour in the fried chicken chunks, add the dried chili peppers and Sichuan peppercorns, and there is no need to add any seasoning afterwards because the sauce has a salty taste.
  • 10. Pour in white sesame seeds when the pot is about to come out.
