Before moving, I lived on the so-called barbecue street in Tianjin. Every evening, countless customers would come in groups of three or five, eating grilled skewers and having a few drinks. The barbecue restaurant wouldn't close until two or three in the morning. It is evident that grilled skewers are highly favored by the people. Five star hotels have their own nobility, but this common way of eating is even more popular.

Steps to make [Tianjin] Mutton shashlik
- 1. Wash the lamb and cut it into pieces of about 1.5 centimeters.
- 2. Marinate with scallions, cooking wine, Sichuan peppercorns, soy sauce, salt, sugar, oil, and starch for 3 hours.
- 3. Then string them together with bamboo sticks.
- 4. Lay tin foil on the baking tray, with a matte finish that touches the food, and place lamb skewers on top
- Bake at 200 degrees Celsius for 25 minutes in the oven, and when halfway through, take it out and flip it over.
- 6. After baking for 20 minutes, take it out and sprinkle it with barbecue powder. I also sprinkled some cumin. Put it back in the oven and continue baking.
