Steps to make Xiancao jelly
- This is the fairy grass! What a great thing to cook fairy grass jelly! I may not buy many herbs from shops that sell them, and not everyone sells them. I bought it in Ba Shi when I was in Xiamen. There was only one last bit of fairy grass left at home, and I was afraid it would spoil next year. It happened to be hot these past few days, so I boiled it. Pure natural, without any additives. After eating this, I no longer want to eat the fairy grass sold on the street.
- 2. Clean the fairy grass and prepare rice soup. Fairy grass will have color when it goes into the water, no matter how you wash it, it will still have color. If you want to wash it until the water is clear, you will be exhausted and unable to cook it into a paste. Rub it a few times and wash it until there is no sand left. This is very important, otherwise there will be sand in the fairy jelly later. Wash and soak for half an hour. When cooking porridge, pour out some thick rice soup and add it to the finished soup to make it easier to freeze.
- 3. Boil in the pot. I cooked it in an electric rice cooker without looking at the heat or water, which is convenient. Add more water and boil for one or two hours to produce more paste. Some people say that pounding before cooking makes it easier to freeze, but I haven't tried because I don't have the tools. But considering this, it will definitely make it easier to produce pulp.
