Steps to make Roujiamo
- 1. Prepare materials.
- Soak the pork belly in water for 8 hours, and change the water twice during the process.
- 3. Boil water in a pot and blanch the soaked pork belly.
- 4. Wash the blanched pork belly thoroughly.
- 5. In a flat bottomed pan without oil, fry the pork belly over low heat to extract some oil.
- 6. Add an appropriate amount of rock sugar and simmer to give the pork belly a sugar color.
- 7. Bring the brine to a boil in an electric pressure cooker, add pork belly, scallions, ginger, and a seasoning pack (which contains star anise, fennel, and cinnamon).
- 8. Add sufficient salt, cover and simmer for several hours.
- 9. Make bread while waiting for the meat. Mix flour and yeast with baking powder.
- 10. Heat water and make dough.
- 11. After the dough has risen, knead it until smooth and divide it into small equal portions.
- 12. Roll the small pieces into an ellipse and roll them into long strips.
- 13. Roll from top to bottom.
- 14. Roll it up as shown in the picture, with the mouth closed at one end.
- 15. Press flat with your palm.
- 16. Roll it slightly into a bowl shape.
- 17. Put the prepared bread in a flat bottomed pan, without adding oil, and simmer over low heat.
- 18. Just change color on both sides, move to the electric pancake pan and continue to cook.
