Steps to make Durian Mousse Cake
- 1. Mix cocoa powder with oil until there are no particles to form cocoa paste, and sieve the flour
- 2. Add sugar to the egg, stir it with water while keeping it warm, and heat it up to 38-40 degrees Celsius before leaving. First, beat it at high speed
- 3. Then beat it at medium speed until it foams, and finally use slow speed to stabilize foam, and send it to the foam of yolk paste as shown in Figure 1, which is light and fine. Use the egg beater to draw the "8" status;
- 4. Sift the sieved powder again and mix quickly with a scraper until no dry powder is seen;
- 5. Take an appropriate amount of batter and add it to the cocoa paste. Mix well first
- 6. Then pour the mixed batter into the egg batter. Use a rubber scraper to stir evenly.
- 7. Install it into the mold and gently drop the protruding mold twice to shake off the air.
- Preheat the oven to 175 degrees and bake for 25 minutes. After cooling, demold and cut 2 pieces horizontally for later use. Because the baked slices are square, please ignore their roundness. If you use a round mold to bake, it won't be a problem.

- Add a small amount of matcha powder and 10 grams of sugar to 17.120 grams of light cream and beat it with an electric mixer to create patterns. Take a small round mouth and place it in a piping bag. Decorate it with a few circles of small dots resembling the shape of a durian shell.
