Steps to make Light cheese cake
- 1. Separate egg yolk and egg white
- 2. The egg white bowl should be free of water and oil
- 3. Cut the cream cheese into small pieces, soften it over water, mix it with light cream, heat it up while stirring evenly, and stir until smooth without any particles
- 4. Add egg yolks in portions, stir well until none are added
- 5. Transform butter into liquid form, add it to the cheese batter, and stir evenly
- 6. Sift in low gluten flour and corn starch
- 7. Add granulated sugar to the protein in three portions and beat until it reaches a large hook
- 8. Take one-third of the protein cream and add it to the cheese batter. Cut and mix evenly,
- 9. Pour back two-thirds of the protein cream, mix well, and pour into the mold
- 10. Place it in the oven at 150 degrees Celsius for 40 minutes, then turn it to 170 degrees Celsius for 20 minutes (depending on the temperament of your own oven)
