Steps to make Yunnan Classic Cuisine - Old Milk Potato

  • 1. Wash the potatoes and cook them in a pot.
  • 2. Let the cooked potatoes cool and peel them.
  • 3. Place the peeled potatoes on the cutting board and use a knife to forcefully pat them down, patting them into a pancake shape. Wash the scallions and cut them into chopped scallions.
  • 4. Heat the wok and add a spoonful of lard to refine it.
  • 5. Add mashed potatoes and some salt, stir fry for about two minutes.
  • 6. Pour in half a bowl of chicken soup and stir fry continuously to make the mashed potatoes more powerful. (No chicken soup can be replaced with water)
  • 7. After adding heat to the potatoes, add chopped scallions and stir fry a few times before serving.
