Technique
Steps to make Lazy Mapo tofu
- 1. Cut the corners of the bottom of the tofu box to allow air to enter, making it easy to demold.
- 2. After scratching the plastic film on the surface, invert it onto the cutting board and gently pinch the packaging box to further separate the packaging material from the tofu.
- 3. Cut the tofu into approximately 2 * 2CM cubes, sprinkle a little salt and soak in clean water to remove the beany smell, and then marinate the tofu slightly to enhance its flavor.
- 4. Cut the scallions into chopped ones.
- 5. Add about 80g of clean water to half a bag of Mapo tofu seasoning (not too particular about the amount of water), and mix well.
- 6. Add a little salt and cooking wine to the minced meat and stir vigorously in one direction.
- 7. Heat up a hot pot and cool the oil to scatter the minced meat.
- 8. Add drained tofu cubes, gently scratch them, and try not to let the tofu shatter. Add a little water and boil. This step mainly involves cooking the meat.
- 9. Pour in the prepared seasoning batter, stir fry gently until evenly mixed, and over high heat collect the sauce.
