Steps to make Salted egg yolk fresh meat zongzi
- 1. Cut the meat into pieces, add five spice powder, pepper, salt, sugar, dark soy sauce, light soy sauce, and oyster sauce. Mix well and refrigerate overnight. I use snowflake meat with skin on the front legs. You can also use pork belly.
- 2. Prepare marinated meat and roasted salted egg yolks. I baked salted egg yolks in a 150 degree oven for 5 minutes after spraying alcohol.
- I soaked red beans and peanuts 6 hours in advance. Soak glutinous rice for 3 hours.
- 4. Remove the soaked glutinous rice and control the water level.
- 5. Add soy sauce, remove and mix oyster sauce evenly.
- 6. Add peanuts and red beans and mix well.
- 7. I use wide bamboo leaves, which are rolled into a cone shape from the wide end, with rice at the bottom and meat and salted egg yolk in the middle.
- 8. Place rice at the top, but be careful not to fill it too full. This way, when wrapping, you can fold it tightly around without any leakage.
- 9. After wrapping, put it into the pot, add Zongzi, and boil it over high heat to low heat for 3-4 hours. A slight fire is the minimum fire, as long as the water surface appears slightly bubbling.
