Steps to make Twice cooked pork with Peppers
- 1. Put the pork belly into a pot, add Sichuan peppercorns, scallions, and ginger slices, bring to a boil with water, cover and turn to low heat. Cook for ten minutes.
- 2. Cut ginger slices, garlic slices, and a spoonful of Douban sauce for later use.
- 3. Cut the pepper diagonally into sections.
- 4. Cool the cooked pork belly and slice it thinly.
- 5. Add bottom oil to the pot and stir fry the pork belly until the oil is removed.
- 6. Add ginger slices and garlic slices and stir fry until fragrant.
- 7. Add Douban sauce and stir fry until red oil is added.
- 8. Add light soy sauce and dark soy sauce, stir fry and color.
- 9. Add the chili pepper section and stir fry over high heat for a few times. Finally, add some chicken essence to enhance the flavor.
