Roujiamo "is an abbreviation for" Roujiamo "in ancient Chinese. It is one of the characteristic snacks in northwest China, mainly consisting of" La Zhu Roujiamo "(pork) from Shaanxi and" Yang Mu Roujiamo "from Ningxia. Today, I followed the noodle chef Youha to learn how to make Roujiamo. I happened to have braised pork bought from an old brand at home, and I used it to make it. It's absolutely delicious!

Steps to make Roujiamo
- 1. Put flour, water, and yeast into the bread machine bucket
- 2. Knead into dough
- 3. Put it inside for fermentation. It doesn't need to be too big. It takes half the time to make Mantou for fermentation than usual
- 4. Rub the dough vigorously until smooth, roll it into long strips, and cut them into 10 pieces
- 5. Take a pill and flatten it to roll it out
- 6. Roll it up from top to bottom, this is the rolled dough
- 7. After rolling everything up, let it stand for 10-15 minutes
- 8. Flatten and roll the dough into circular pieces after waking up
- 9. It's best to have a concave center and slightly higher edges around it, as mine is not obvious
- 10. Put it into a hot pan and cook over high heat
- 11. It doesn't take a minute to flip it over, just color it on both sides
- 12. Place the dough into the baking tray
- 13. Place it in a preheated oven at 170 degrees Celsius and bake for 10 minutes
- 14. Take it out when the time comes
- 15. When I'm lazy, I use ready-made pork belly braised with five flowers bought from old brands, or I can marinate it myself
- 16. Chop braised pork into small pieces
- 17. Soak the pepper in salt water for 10 minutes
- 18. Wash and chop thoroughly
- 19. Cut the dough in the middle
- 20. Add minced meat and diced chili peppers
