Oil tea is a specialty snack in Henan province, which can be seen everywhere in the breakfast market. Although it is already a local specialty snack, even in Henan, the preparation of oil tea varies in different regions. Our oil tea here is not only made by stir frying the oil tea noodles and boiling the oil tea, but also sprinkled with some fried gluten foam on top. The gluten foam is very crispy, paired with rich and fragrant oil tea, to complete a delicious breakfast.

Steps to make Henan Nut Oil Tea
- 1. Steam the flour in a steamer cloth for 25 minutes, then let it cool, roll it out, crush it, and sieve it for later use.
- 2. Stir fry walnut kernels until cooked
- 3. Stir fry all peanuts, sesame seeds, and walnut kernels until cooked and let them cool,
- 4. Use the meat grinder's grinding cup to grind peanuts and walnuts into granules, and grind sesame seeds into granules using a grinding cup. Alternatively, all peanuts can be ground into granules using the meat grinder cup.
- 5. Pour a small amount of olive oil into the pot
- 6. Pour in flour and stir fry slowly over low heat, preferably in a non stick pan, so that it is not easily burnt
- 7. After the oil is completely absorbed, add a small amount of olive oil and continue stir frying until the oil is completely absorbed,
- 8. Add oil 3-4 times and stir fry the flour until it is smooth. The amount of oil should give the flour a feeling of oiliness.
- 9. After stir frying the flour, add all the crushed nuts, add an appropriate amount of salt and five spice powder,
- 10. Continue stir frying for about 3 minutes. After cooling, it was received in a sealed box.
- 11. When eating, take about 3 teaspoons and rinse with water
- 12. Bring to a boil over low heat, and once cooked, it will be a thick oil tea. You can also directly rinse with boiling water without boiling, but after rinsing with boiling water, keep stirring until smooth and without lumps. The thickness can be adjusted according to one's preference
- 13. Pour the cooked oil tea into a bowl and sprinkle it with crispy fried gluten for soaking. Enjoy
