It seems like today is a once-in-a-four year day on February 29th, and I should cherish it. I made Sixi roasted bran again to update my favorite roasted bran. It can be hot or cold, with a tempting appearance of meat dishes, but deep down, it has a rich and diverse vegetarian taste without any dried flowers. Before going to work in the morning, I soaked roasted bran, fungus, and shiitake mushrooms in warm water, and after work, I found them waiting in the container, boiling and cooking. - 1. Soak dried roasted bran, dried black fungus, and dried shiitake mushrooms in warm water in advance
- 2. Soak the roasted bran and tear it into 2cm cubes by hand. Wash and squeeze it in cold water at least three times. Heat hot water in a pot and put the bran in. Roll it over high heat and simmer on low heat for 10 minutes. Remove and drain the excess water
- 3. Put the peanuts into boiling water, boil for 10 minutes, remove and drain the water
- 4. Tear small pieces of soaked fungus by hand and cut each mushroom into two pieces
- 5. After heating the wok, pour in slightly more cooking oil than usual. Once the oil is warm, add roasted bran pieces and fry until golden brown in color. Remove and drain the oil
- 6. Leave some oil in the pan and stir fry peanuts, mushrooms, and fungus for about 1 minute
- 7. Add roasted bran chunks and stir fry evenly. Add sugar, light soy sauce, dark soy sauce, and chicken soup. The broth should not exceed the roasted bran. Bring to a boil over high heat and simmer over low heat for 10 minutes. Drain the broth
