Today, I used light cream to make a light cream small meal bag. It's fragrant, soft, and brushed, and a bite is full of milk fragrance! I made it myself without any additives, filling a baking tray with a chubby texture that was very healing. As soon as it came out of the oven, half of the tray was dried up.

Steps to make Light cream small meal bag, fragrant, soft and brushed, full of milk fragrance when bitten!

  • 1. Mix 100g of milk and 4g of yeast together and stir evenly. Let it stand for 5 minutes to activate the yeast.
  • 2. Mix yeast milk, 60g granulated sugar, 100g whipped cream, and 1 egg evenly. Sift in 380 grams of high gluten flour, 20 grams of milk powder, and 3 grams of salt.
  • 3. Mix well at low speed first, and then stir at high speed until a coarse film is formed.
  • 4. Add 35 grams of salt free butter softened at room temperature and continue stirring until a thin film is formed.
  • 5. Take out the dough and knead it round.
  • 6. Put it in a pot and wrap it with plastic wrap, ferment until it doubles in size. Note: Fermentation at room temperature is sufficient in summer, and find a warm place to ferment in winter.
  • After the dough expands to twice its size, if it does not collapse or shrink when inserted in the middle, it is fermented.
  • 8. Take out the dough and let it breathe.
  • 9. Divide the dough evenly into 16 portions.
  • 10. Fold and knead, then arrange in a baking tray.
  • 11. Bake at 35 ℃, add a bowl of hot water, and let it ferment to 1.5 times its size.
  • 12. Take it out and apply a layer of egg mixture on the surface.
  • Sprinkle some almond slices to decorate.
  • Preheat the oven to 170 ℃ and bake for about 20 minutes. Note: After coloring the surface, place a piece of aluminum foil on top to prevent the surface from being too burnt.
  • After baking, take it out and let it cool. Seal it and store it at room temperature for 2-3 days.
