I have been making rye or whole wheat bread recently, and my husband prefers this rye bread. He always says that this bread has a strong wheat aroma, which has been away from us for a long time. Rye contains a high amount of dietary fiber. In order to compensate for the lack of gluten and elasticity in bread made from rye flour, half of the high gluten flour was added to neutralize it.
