Steps to make Roujiamo

  • 1. Add the dough ingredients into the bread bucket and start the kneading process. If rubbed by hand, it should be rubbed until the surface is smooth. After kneading, let the dough rise naturally. You don't need to go through it, just wake up for about 15 minutes.
  • 2. Take out the awakened dough, knead it smooth, and divide it into small portions.
  • 3. Roll and flatten.
  • 4. Roll it into a long tongue shape and fold it in half along the long side.
  • 5. Roll up after patting and press your tail underneath.
  • 6. Flatten and roll into cakes. The previous plastic surgery technique was to prevent the cake from becoming hollow when heated. If you don't mind the hollow cake, there's no need to go through so much trouble.
  • 7. Preheat the pan, add pancakes, and fry on both sides. There are two methods here. One is to directly fry the cakes in a flat bottomed pan until they are fully cooked. The other is to first fry both sides of the pan until they are hard, and then place them in the oven at 180 degrees until the cakes are fully cooked. I used the second method, where each pancake was fried and set before being moved to the oven.
  • 8. Let's talk about braised pork. I made it at night and didn't take any pictures. I used a simple version of the braised method. Cut the hind leg meat or pork belly into large cubes, blanch them in water, then add water and seasonings and bring to a boil over high heat. Reduce the heat and simmer for three hours until the meat is crispy and fragrant. The seasoning here is also relatively simple. Basic ingredients include salt cooking wine, light soy sauce, and dark soy sauce. Spices can be added according to one's own situation, such as star anise, fragrant leaves, grass fruit, Sichuan peppercorns, etc. If not available, five spice powder can also be used. The main reason is that the stewing time should be long, and the water amount should be controlled well. Add enough water according to one's own pot to avoid adding water in the middle. If the soup is too thick and not strong, you can use high heat to collect the juice later.
  • 9. Prepare green peppers and garlic sprouts, or scallions and cilantro. It depends on your preference.
  • 10. Remove the meat, which is hot, and chop it together with green peppers and garlic sprouts. During this process, add meat broth.
  • 11. Cut open the prepared cake and sandwich it with meat. Let's start eating.
