Steps to make English Dim sum --- Rose Scone
- 1. Ingredients: 10g dried roses, 125g milk, 250g low gluten flour, 6g yeast, 70g butter, 60g sugar, a small amount of egg yolk (for brushing the surface)
- 2. Dissolve yeast in warm milk and let it stand for 5 minutes for later use.
- 3. Cut butter into small pieces.
- 4. Sift the low gluten powder and pour it into a bowl, then add butter and sugar.
- 5. Rub butter evenly into flour by hand and grind it into fine crumbs.
- 6. Add dried roses to the flour.
- 7. Process into small pieces and mix with flour for later use.
- 8. Add yeast water in portions to the flour bowl and mix well.
- 9. Gently knead the dough until it has a glossy surface. (Do not rub excessively to avoid gluten)
- 10. Use a rolling pin to roll out a small piece of dough, with a thickness of about 1.5-2cm.
- 11. Cut into triangles, or use a small cookie cutter to cut.
- 12. Place tin foil on the baking tray, place the cut pieces into the tray, and brush with egg yolk mixture.
- Preheat the oven to 180 degrees, in the middle layer, for 15 minutes.
