Shao style braised chicken wings root

Shaoxing cuisine mainly uses freshwater fish, shrimp, river fresh food, poultry, and beans as cooking ingredients. It emphasizes a crispy and glutinous texture, original soup and juice, light oil, avoiding spiciness, and a strong sauce flavor. Steps to make Shao style braised chicken wings root

  • 1. Wash the wing roots and drain the water
  • 2. Put cold water into a pot, add chicken wings, 3 slices of ginger, 10ML of white vinegar, 5ML of cooking wine, blanch in water, bring to a boil over high heat, and simmer for another 2 minutes. Remove the wing roots and rinse with warm water
  • 3. Put cooking oil into a hot pot, immediately add ginger, garlic, and red chili peppers. Do not stir fry the chili peppers until they are burnt
  • 4. Add the wing root and stir fry for about 2 minutes
  • 5. Add yellow wine, white sugar, all spices, and mother son soy sauce and cook for about 1 minute to color the chicken wings
  • 6. Add about 100ML of boiling water and bring to a boil over high heat. Reduce the heat and add a lid to the pot to simmer for about 20 minutes. Use a spatula to stir fry several times in the middle to prevent sticking to the pot (it must be boiling water)
  • 7. Harvest juice over high heat
  • 8. It's out of the pot
