Steps to make Zongzi with Soy Sauce
- 1. Prepare the ingredients,
- 2. First marinate the pork with sauce - take the pork forelimbs, peel and wash them,
- 3. Cut lean meat into large pieces and fatty meat into small pieces,
- 4. Mix salt, sugar, cooking wine, ginger powder, pepper, sweet sauce, chicken essence, sesame oil, and stir well,
- 5. Marinate for 1-2 days (put in the refrigerator)
- 6. Rinse the reed leaves with clean water, boil them in boiling water for 3 minutes, remove them, and rinse them with clean water.
- 7. Clean the glutinous rice and add the marinade to the marinated meat. Stir well,
- If the taste is light, you can add some salt and stir first.
- 9. Take 3 reed leaves, cut off the thick stem at the top, and fold them into a funnel shape,
- 10. First, add a small spoonful of glutinous rice, then add a piece of lean soy sauce and a small piece of fatty meat,
- 11. Cover with another layer of glutinous rice,
- 12. Hold the reed leaves in your palm and gently flatten the upper layer of glutinous rice,
- 13. Cover the other side of the reed leaf. If it still doesn't cook, you can add a piece of reed leaf here, fold it in half, and wrap the corners.
- 14. Fold the reed leaves in half at the sharp corners on both sides, so that the glutinous rice is less likely to leak out,
- 15. Fold the reed leaves over the other side, move your fingers and hold them, so that Zongzi is not easy to spread,
- 16. Use cotton thread to tie, knot, and cut off the surplus reed leaves, so that Zongzi can be wrapped.
- 17. Take the pressure cooker and put Zongzi into it,
- 18. Add 80% water and bring to a boil over high heat. After opening the valve, reduce the heat to low for 30 minutes and turn off the heat,
- After a slight cooling, turn on the pressure cooker and add water until it is 80% full,
- 20. Boil the valve over high heat and simmer over low heat for about 1.5-2 hours.
