Steps to make Braised beef
- 1. A piece of beef tendon meat, it must be tender (my piece is a bit old), clean it thoroughly
- 2. Put water in the pot, soak the beef for 5 hours, and change the water every hour. This is very important, as the beef will be very clean when cooked later
- 3. Prepare tangerine peel, Sichuan pepper, star anise, fennel, cinnamon, cloves, and fragrant leaves (not too many fragrant leaves, about 2 leaves are enough)
- 4. Wrap all the spices with gauze
- 5. Dissolve the yellow sauce in water and let it stand for half an hour
- 6. Bring the spices to a boil over high heat
- 7. Filter the yellow sauce and pour it into the pot
- 8. Bring to a boil over high heat and add beef,
- 9. Remove the beef foam
- 10. Add an appropriate amount of yellow wine, soy sauce, and rock sugar
- 11. Add chopped scallions and diced ginger, bring to a boil over high heat, reduce heat to low and simmer for 2-3 hours (depending on the size of the beef), then add an appropriate amount of salt
- After cooking, soak overnight for at least 3 hours to enhance the flavor of the beef
