Steps to make Annual surplus - steamed mouse spots
- 1. Clean the mouse spots thoroughly, mix 1/2 tablespoon of cooking wine and 1 teaspoon of salt inside and outside, marinate for 10 minutes, then rinse and dry.
- 2. Cut half of the ginger into shreds, half into slices, one onion into shreds, and two scallions into sections.
- 3. Spread scallions and half ginger slices on a steamed fish plate.
- 4. Add fish, pour in 1/2 tablespoon of cooking wine and 1 teaspoon of oil, add the remaining ginger slices and scallions, and also add some to the stomach.
- 5. Put it into a small pot and steam over high heat for 7 minutes. Turn off the heat and let it simmer for 3-5 minutes.
- 6. Take out the pot.
- 7. Pour out the small ones that were steamed, and pick out the ginger slices and scallions.
- 8. Spread shredded scallions on top.
- 9. Pour 2 tablespoons of oil into a small pot and heat it up. Add shredded ginger and let it explode until fragrant.
- 10. Pour in steamed fish soy sauce and bring to a boil. (I'm used to burning soy sauce, but I can also pour it directly on the fish.)
- 11. Pour it onto the fish while it's hot.
- 12. Fresh and fragrant.
