Roasted Fish with Soy Sauce

Steps to make Roasted Fish with Soy Sauce

  • 1. Wash the grass carp and make a few diagonal cuts on both sides of the fish body for flavor. Use a kitchen tissue to thoroughly dry the water on the fish body. Apply half a spoonful of salt evenly on the inner and outer sides of the fish, gently massage for a moment, and then marinate for 10 minutes
  • 2. Pour oil into the pot and heat it over high heat. Add dried chili peppers, seasonings, and a portion of scallions, ginger, and garlic (if you like spicy food, you can also add Sichuan pepper). When the fragrance wafts out, filter out the seasoning and leave only the fried oil.
  • 3. Put the marinated fish into an oil pan and fry it for a while, with the back of the fish facing downwards (if the fish comes out of water again, be sure to dry it again) (preheat the oven and heat it up and down at 220 ℃)
  • 4. After frying the fish, place it on a baking tray covered with tin foil. First, lay some sliced onions on the tin foil, and then use a brush to dip the fried fish oil onto the surface of the fish, brushing as much oil as possible. After brushing, place the middle layer in an oven preheated at 220 ℃ and bake for about 15 minutes
  • When grilling fish, stir fry and prepare side dishes. Peel and cut lettuce into slices, slice carrots, and slice the remaining portion of onions. Cut the fermented black beans and bean paste into small pieces first
  • 6. Heat the remaining oil from the fried fish over high heat. First, add scallions, ginger, and garlic to fry until fragrant. Then, add Pixian Douban and Douchi to continue stir frying. Then, pour the lettuce, carrots, and onions into the pot and stir fry for 2 minutes. Finally, add water (more than these ingredients are enough), and wait for the water to boil
  • 7. After the fish is grilled, take it out of the oven and immediately spread the cooked side dishes around the fish. Pour the soup onto the knife edge of the fish body, so that the taste of the soup can penetrate into the fish meat. Put the baking tray back into the middle of the oven and bake at 160 ℃ for another 8 minutes. The grilled fish is ready. Take it out and garnish with a few coriander sticks
