Steps to make Oil fermented mash

  • 1. Prepare the raw materials in advance. It is recommended to cook the lard yourself and use clean and hygienic ingredients; If you find it troublesome, you can simply buy cooked lard; Fermented glutinous rice (also known as sweet wine), choose rice grains that are full and have moderate hardness. Some fermented glutinous rice grains are too soft, and the resulting oil fermented glutinous rice is soft, rotten, and not well formed, so it is not recommended to use them; Accessories such as red dates, goji berries, and walnuts can be paired according to their preferred taste
  • 2. Cut the pork lard into small pieces and put them in a hot pot over low heat to simmer. The size of the pork lard should be moderate. If it is too large, the cooking time will be longer, and if it is too small, it is easy to burn; At the beginning, simmer over low heat. Once the oil is cooked, switch to medium heat and simmer all the oil out
  • 3. Put the cooked black sesame seeds into the cooking machine and stir them into small pieces. It is not recommended to stir the black sesame seeds too finely. Putting them into the mouth can give the sesame seeds a grainy texture and a better taste
  • 4. Cut the red dates into dice, walnuts, and peanuts, mash them slightly to keep them small, and chop the orange cakes for later use. Juice cakes can enhance the flavor of the oil mash
  • 5. Pour the boiled oil into the pot, and put black sesame, walnut, and peanut chips into the pot to stir fry until fragrant. Because black sesame, peanut chips, and walnut contain fat soluble vitamins, stir fry them in low heat to fully mix with the oil and penetrate the fragrance
  • 6. After the aroma is stir fried, add red dates, goji berries, and orange cakes and stir fry; Simultaneously add fermented mash and stir fry evenly
  • 7. Fermented rice contains water and trace amounts of alcohol, so it needs to be stir fried to dry the excess water. When the oil on the surface of the pot becomes clear, it indicates that the water has evaporated. To avoid burning the pot, the shovel should stir fry from the bottom of the pot
