Technique
Steps to make Dongpo Braised Pork
- 1. Prepare the ingredients, cut scallions into sections, and slice ginger for later use
- 2. Boil water in a pot, blanch the pork belly in water, remove the blanched water and rinse with water, scrape off the skin and remove impurities
- Mix together 3.15ML of dark soy sauce, 15ML of light soy sauce, and 300ML of yellow wine
- 4. Put ginger slices and scallions into a clay pot
- 5. Cut the blanched pork belly into 4CM * 4CM cubes, place the skin facing down into a clay pot, pour in yellow wine, light soy sauce, and rock sugar
- 6. Cover and simmer over low heat for one hour
- 7. Take out the stewed meat, place the skin facing up in a bowl, steam it in a steamer, and steam over medium heat for 20 minutes
